Port council OKs loan for new downtown restaurant

Port Washington is about to get another restaurant, the Singing Salmon Saloon.

The restaurant will be at 219 N. Franklin St., in the space formerly occupied by Wicked Grille.

The Port Washington Common Council on Tuesday paved the way for the restaurant by approving a $25,000 loan from its revolving loan fund.

The loan will be for five years at 1.7% interest, Bob Harris, the city’s director of planning and development, said.

The restaurant will be owned by Aaron and Amanda Fleischman, who own and operate Rascal’s Bar in Port and have significant experience in the restaurant industry, and Joe Singer, a chef since 2011, according to a memo from Ozaukee Economic Development, which oversees the loan program.

The Fleischmans have been able to realize a 20% increase in profits at Rascal’s during the past year, even with Covid-19 related restrictions, the memo notes.

The restaurant will offer homestyle gourmet burgers and sandwiches and pair cocktails with Midwestern lake country fare using locally sourced products, the memo states.

The menu will have about 15 regular items as well as specials, and eventually will include a Saturday and Sunday brunch.

Preliminary estimates are that the restaurant could turn a profit in its first year and show “solid returns” in year two, the memo states, noting that the eatery has a four-year lease for the space.

“I think it’s fantastic we’re going to have a restaurant in Port Washington that offers Midwestern lake country fare, and I’m really excited to figure out what that is,” Mayor Ted Neitzke said.
